Vegetable Pesto Salad

This salad is a mixture of all the wonderful vegetables and spices.
This is in two sections. The salad section and the dressing section.

The salad:

Cut all ingredients into bites size pieces and combine in a large bowl.

1/2 lb of Mozzarella Chunked into bite size pieces.
1 can of X large black olives
1 cup of green olives
1/2 cup of sundried tomato pesto
1 can of artichokes, cut in half.
1/2 cup of roasted red peppers, cut into bite size pieces.
2 tablespoons of capers
2 stalks of celery, chopped
1 cucumber peeled and diced into quarters
1/2 onion, chopped
One stick of pepperoni, sliced in ¼ inch thickness, then into quarters.

The dressing

Put the following ingredients into a food processor. Add the olive oil while the processor is mixing the ingredients. After all the ingredients are blended together pour over all the vegetables.

1/2 bunch of flat leaf parsley
about 10 leaves of Basil
1 cup of grated parmesan cheese
1 tea Kosher salt
¾ cup of Olive oil
4 cloves of garlic
2 tablespoons of tomato basil Mrs Dash





This salad is not limited to just the ingredients I mentioned. Feel free to add your favorite vegetables, cheese and meet.
