Roasted Red and Sweet Potatoes

Roasted Red and Sweet Potatoes with Caramelized Onions
Roasted potatoes come out so sweet and delicious. It makes a perfect side dish with any meal.

3 large sweet potatoes
6 med red potatoes
1 Vidalia onion
1/2 cup parsley
1/4 cup olive oil
Salt and pepper to taste

Cut potatoes into 2 inch squares. Cut onion into slices. Toss all ingredients together. Place on a lined cookie sheet and bake for one hour at 350 degrees.


My family likes them best with Meatloaf.
